Well, I said I would post this quite some time ago, and didn't exactly get to it. Story of my life, I guess. So, here it is...the meatball recipe to go with the spaghetti sauce. SO good when simmered together for about an hour.
1 pound ground beef
1 egg
1/2 cup bread crumbs (I use whole grain, processed til medium size...not very fine)
about 1/2 tsp Italian seasoning
1/3 cup grated Parmesan cheese (I just use the stuff in the can)
1 tsp garlic powder, or a little less if you don't like garlic as much
scant 1/4 cup onion, finely diced
salt and pepper to taste (I do not pepper, use only a little bit of salt)
Mix all together and shape into balls. You can either plop them in sauce just like that, or I like to brown them in a skillet, then into the sauce. Or, you can bake them at 375 for 12 minutes or so. Too easy, and way better than any store bought version you'll find.

So, here's my photo...a very nice picture of Sarah on her first day of kindergarten, sporting her crown from the Dublin Irish Festival. Kind of boring, considering all the silly pictures we have on the computer, but I had rules to follow! Now, the problem is, I don't have 4 follew bloggers to tag...I only know one blogger, and she's the one who tagged me. Quel dommage!

Igloos and Stuff
Today we had a snow day, just like almost all the rest of the residents of Ohio. My back is sore from shoveling and trying to assist in "igloo" building. You can see our finished product here...it started to sleet in the middle of building and I called it a day. We tried to give it a top with a blanket and then a sheet, but neither of those worked. You can see why I didn't become an engineer, but they were happy.

Old Man

Zubin is getting really old. I mean REALLY old. He's been suffering from hip dysplasia for many years, but now it's so bad his back legs actually face each other instead of facing forward. He doesn't eat much anymore (unless it's food he's stolen off of a child's plate downstairs) and he's lost 25 pounds in 5 months.
Despite all of that, he's a happy guy. He trots around with his messed up legs, lays in the front yard watching the house for us, and still loves us as he always has. He stays closer to Steve now, since he can't really hear or see much. He loves to lay on Sarah's blankets, coat, or clothing that is left to lay on the floor. It's just not his time yet...

Happy New Year!
So, it's not a very inventive title for the post, I'll give you that. I'm finding myself recycling the same old stuff that I do each year. Should I bother with a resolution? Stop procrastinating...get organized...eat a healthier diet....blah, blah, blah.
This year, I resolve to just be happy and forget about the millions of imperfections I could list. We are so blessed, and I would like to just enjoy that for a change. I will enjoy life in my messy house with my wonderful, imperfect, and sometimes unhealthy family.....
